     24 Crazy Delicious Ways to Roast Vegetables - My newest, favorite easy cooking method is roasted vegetables.  You basically pile what you want into the pan, drizzle it with olive oil, and broil it.  Here's a great slide show with recipes to get you started:  http://www.delish.com/holiday-recipes/christmas/g3623/roasted-vegetable-recipes/
I admit I'm not really a fan of Brussels sprouts, but my  husband loves them.  We discovered that roasting them is a perfect way to meet his need for crunch, and my need for flavor (slide 1/24). The picture on the left (slide 22/24) shows a delicious combination of heart healthy omega rich walnuts that reduce bad cholesterol and carb-friendly butternut squash.  Butternut squash can be a pain to cut up, although I've discovered a good hack on You Tube.

Not in the mood to Google and chop?  You can find them pre-cut in the frozen section and the fresh veggies section; although the latter are a bit more pricey.
